Dongchimi
Clear water kimchi with radish
Dongchimi is a mild, clear Korean water kimchi of radish fermented in a lightly salted brine.
The refreshing brine is drunk too and even serves in winter as a base for cold noodles.

Ingredients
- Korean radish (mu)1 kg
- Salt3 tbsp
- Garlic & gingersome of each
- Spring onions3
- Asian pear1
- Water1.5 l

Preparation
Cut the radish into large pieces and salt.
Layer with garlic, ginger and pear in a jar.
Pour over lightly salted water.
Start fermenting one to two days at room temperature.
Mature chilled and serve cold.
