Dongchimi

Clear water kimchi with radish

Dongchimi is a mild, clear Korean water kimchi of radish fermented in a lightly salted brine.

The refreshing brine is drunk too and even serves in winter as a base for cold noodles.

Ingredients

  • Korean radish (mu)1 kg
  • Salt3 tbsp
  • Garlic & gingersome of each
  • Spring onions3
  • Asian pear1
  • Water1.5 l

Preparation

  1. Cut the radish into large pieces and salt.

  2. Layer with garlic, ginger and pear in a jar.

  3. Pour over lightly salted water.

  4. Start fermenting one to two days at room temperature.

  5. Mature chilled and serve cold.
