Doria
Japanese rice gratin with béchamel
Doria is a Japanese yoshoku dish that bakes rice under a creamy béchamel sauce, created in the 1930s at a hotel in Yokohama.
Buttery rice and a golden cheese crust make the gratin a beloved comfort food, often with shrimp.

- Cooked rice400 g
- Shrimp200 g
- Butter & floursome of each
- Milk400 ml
- Grated cheese100 g
- Onion & mushroomssome of each

Preparation
Whisk butter, flour and milk into a béchamel.
Fry onion, mushrooms and shrimp.
Put buttery rice into a baking dish.
Spread béchamel and shrimp over it, scatter cheese.
Bake golden in the oven and serve.
