Japanese rice gratin with béchamel

Doria is a Japanese yoshoku dish that bakes rice under a creamy béchamel sauce, created in the 1930s at a hotel in Yokohama.

Buttery rice and a golden cheese crust make the gratin a beloved comfort food, often with shrimp.

  • Cooked rice400 g
  • Shrimp200 g
  • Butter & floursome of each
  • Milk400 ml
  • Grated cheese100 g
  • Onion & mushroomssome of each

Preparation

  1. Whisk butter, flour and milk into a béchamel.

  2. Fry onion, mushrooms and shrimp.

  3. Put buttery rice into a baking dish.

  4. Spread béchamel and shrimp over it, scatter cheese.

  5. Bake golden in the oven and serve.
