Dotori-muk

Acorn jelly salad

Dotori-muk is a delicate jelly made from acorn starch, regarded in Korea since lean times as a nourishing mountain food.

Cut into cubes, it is dressed with soy sauce, sesame and vegetables into a refreshing side salad.

Ingredients

  • Acorn starch powder100 g
  • Water600 ml
  • Soy sauce2 tbsp
  • Cucumber & carrotsome of each
  • Sesame oil & sesamesome of each
  • Spring onion & gochugarusome of each

Preparation

  1. Whisk acorn starch with water smooth and boil.

  2. Pour the mixture into a mould and let it set.

  3. Cut the jelly into cubes.

  4. Mix soy sauce, sesame oil and gochugaru into a dressing.

  5. Gently dress with vegetables and sauce, serve.
