Fish head with chopped chili from Hunan

Duojiao yutou is a banner dish of Hunan cuisine, where a halved fish head is generously topped with fermented chopped chili.

Gently steamed, the flesh stays juicy while the red chili lends a salty, spicy punch.

Ingredients

  • Large fish head (carp)1 piece
  • Fermented chopped chili (duojiao)5 tbsp
  • Ginger & garlicsome of each
  • Spring onions2
  • Soy sauce & rice wine1 tbsp each
  • Oil3 tbsp

Preparation

  1. Halve the fish head, clean it and place on a plate.

  2. Season with ginger, garlic and rice wine.

  3. Spread the chopped chili generously over the top.

  4. Steam vigorously for about 12 minutes.

  5. Finish with hot oil and spring onions.
