Duojiao Yutou
Fish head with chopped chili from Hunan
Duojiao yutou is a banner dish of Hunan cuisine, where a halved fish head is generously topped with fermented chopped chili.
Gently steamed, the flesh stays juicy while the red chili lends a salty, spicy punch.

- Large fish head (carp)1 piece
- Fermented chopped chili (duojiao)5 tbsp
- Ginger & garlicsome of each
- Spring onions2
- Soy sauce & rice wine1 tbsp each
- Oil3 tbsp

Preparation
Halve the fish head, clean it and place on a plate.
Season with ginger, garlic and rice wine.
Spread the chopped chili generously over the top.
Steam vigorously for about 12 minutes.
Finish with hot oil and spring onions.
