Chinese egg flower soup

Egg drop soup is a simple Chinese soup in which beaten egg is poured into hot broth.

This forms delicate egg ribbons that give the clear broth body and warmth.

  • Chicken broth1 l
  • Eggs3
  • Cornstarch1 tbsp
  • Spring onion2
  • Soy sauce & sesame oilsome of each
  • White peppersome

Preparation

  1. Heat the broth and season with soy sauce.

  2. Thicken lightly with cornstarch slurry.

  3. Beat the eggs.

  4. Pour in a thin stream while gently stirring.

  5. Serve with spring onion and sesame oil.
