Egg Fried Rice

Dan chao fan – the art of “wok hei”

Fried rice with egg is the simplest and at once most demanding discipline of Chinese cooking. From few ingredients – rice, egg, spring onion – comes a dish that lives on technique.

The key is “wok hei”, the “breath of the wok”: high heat and cold day-old rice so the grains stay separate and take on a smoky aroma.

Ingredients

  • Cooked, cold rice400 g
  • Eggs3
  • Spring onions3
  • Soy sauce2 tbsp
  • Sesame oil1 tsp
  • White pepper1 pinch
  • Oil2 tbsp

Preparation

  1. Heat the wok strongly, scramble in the eggs and let them set.

  2. Add the cold rice and fry, tossing constantly, until the grains separate.

  3. Season with soy sauce and white pepper.

  4. Fold in spring onion and sesame oil.

  5. Serve hot immediately.
