Ensaymada is a soft, spiral-shaped Filipino brioche pastry with Spanish roots.

Brushed with butter and topped with sugar and grated cheese, it is a beloved festive pastry.

  • Flour350 g
  • Eggs3
  • Butter120 g
  • Sugar80 g
  • Yeast & milksome of each
  • Grated cheeseto top

Preparation

  1. Knead a yeast dough of flour, milk, eggs and sugar.

  2. Work in soft butter into a glossy dough.

  3. Let rise, roll out and form into spirals.

  4. Let rise again and bake golden.

  5. Brush with butter and top with sugar and cheese.
