Green-wrapped banana with coconut sauce

Es pisang ijo is a dessert from Makassar in which bananas are wrapped in a green rice flour dough.

Served with coconut sauce, syrup and ice, it is a refreshing sweet for tropical days.

Ingredients

  • Ripe bananas4
  • Rice flour150 g
  • Pandan extract1 tsp
  • Coconut milk400 ml
  • Red syrupto taste
  • Crushed iceto taste

Preparation

  1. Stir rice flour with pandan and water into a green dough.

  2. Roll the dough thin and wrap the bananas.

  3. Steam briefly until the wrap sets.

  4. Cook a coconut sauce of coconut milk and rice flour.

  5. Serve sliced with sauce, syrup and ice.
