Es Pisang Ijo
Green-wrapped banana with coconut sauce
Es pisang ijo is a dessert from Makassar in which bananas are wrapped in a green rice flour dough.
Served with coconut sauce, syrup and ice, it is a refreshing sweet for tropical days.

- Ripe bananas4
- Rice flour150 g
- Pandan extract1 tsp
- Coconut milk400 ml
- Red syrupto taste
- Crushed iceto taste

Preparation
Stir rice flour with pandan and water into a green dough.
Roll the dough thin and wrap the bananas.
Steam briefly until the wrap sets.
Cook a coconut sauce of coconut milk and rice flour.
Serve sliced with sauce, syrup and ice.
