Sichuan beef slices in chili oil

Fuqi feipian is a cold Sichuan starter of thinly sliced beef and offal doused in aromatic chili oil.

The playful name traces back to a married couple who made the dish famous in Chengdu.

Ingredients

  • Beef brisket & tongue500 g
  • Chili oil4 tbsp
  • Sichuan pepper1 tsp
  • Soy sauce2 tbsp
  • Garlic & spring onionsome of each
  • Roasted peanuts & sesamesome of each

Preparation

  1. Boil the beef with spices until tender and let cool.

  2. Slice very thin.

  3. Mix chili oil, Sichuan pepper, soy sauce and garlic.

  4. Douse the beef slices with the sauce.

  5. Scatter with peanuts, sesame and spring onion.
