Vietnamese honey-lemongrass grilled chicken
Ga nuong mat ong is Vietnamese grilled chicken marinated in honey, lemongrass and fish sauce.
The honey caramelises on the grill into a glossy, sweet and savoury crust.

- Chicken thighs800 g
- Honey3 tbsp
- Lemongrass2 stalks
- Fish sauce2 tbsp
- Garlic & shallotsome of each
- Pepper & oilsome of each

Preparation
Finely chop lemongrass, garlic and shallot.
Stir into a marinade with honey and fish sauce.
Rub the chicken and rest for 30 minutes.
Cook on the grill or in the oven.
Baste with the marinade until glossy.
