Vietnamese honey-lemongrass grilled chicken

Ga nuong mat ong is Vietnamese grilled chicken marinated in honey, lemongrass and fish sauce.

The honey caramelises on the grill into a glossy, sweet and savoury crust.

Ingredients

  • Chicken thighs800 g
  • Honey3 tbsp
  • Lemongrass2 stalks
  • Fish sauce2 tbsp
  • Garlic & shallotsome of each
  • Pepper & oilsome of each

Preparation

  1. Finely chop lemongrass, garlic and shallot.

  2. Stir into a marinade with honey and fish sauce.

  3. Rub the chicken and rest for 30 minutes.

  4. Cook on the grill or in the oven.

  5. Baste with the marinade until glossy.
