Ga xao gung is a warming Vietnamese stir-fry of chicken with plenty of ginger strips.

Fish sauce and a touch of sugar balance the heat of the fresh ginger.

  • Chicken pieces600 g
  • Fresh ginger80 g
  • Fish sauce2 tbsp
  • Garlic & shallotssome of each
  • Sugar & peppersome of each
  • Spring onion2

Preparation

  1. Cut the ginger into fine strips.

  2. Sear the chicken in oil.

  3. Add garlic, shallots and ginger.

  4. Season with fish sauce and sugar.

  5. Toss and serve with spring onion.
