Gado-Gado

Indonesia's vegetable salad with peanut sauce

“Gado-gado” roughly means “mix-mix” – a colourful salad of blanched vegetables, tofu, tempeh and egg, brought together by a warm, spiced peanut sauce.

It is Indonesia's answer to the salad plate: nourishing, balanced and full of textures. Without egg and with tempeh it is fully vegan.

Ingredients

  • Peanut butter150 g
  • Kecap manis2 tbsp
  • Tofu & tempeh150 g each
  • Cabbage, beans, carrot, sprouts1 handful each
  • Egg (optional)2
  • Tamarind & chillisome of each
  • Krupuk (crackers)to serve

Preparation

  1. Fry tofu and tempeh in cubes until crisp.

  2. Briefly blanch the vegetables separately, shock to keep them crisp.

  3. For the sauce, warm peanut butter with kecap manis, tamarind, chilli and a little water.

  4. Arrange vegetables, tofu, tempeh and (optionally) egg halves.

  5. Pour over the warm peanut sauce, serve with krupuk.
