Thai yellow curry with potatoes

Gaeng kari is the yellow Thai curry whose colour and aroma come from turmeric and curry powder.

It is the mildest of the Thai curries and shows clear Indian influences through potatoes and onions.

Ingredients

  • Chicken pieces600 g
  • Yellow curry paste3 tbsp
  • Coconut milk400 ml
  • Potatoes2
  • Onions1
  • Fish sauce & palm sugarsome of each

Preparation

  1. Fry the curry paste in a little coconut milk.

  2. Add the chicken and sear.

  3. Pour in the rest of the coconut milk.

  4. Add potatoes and onions and cook.

  5. Season with fish sauce and palm sugar.
