Peppery vegetable soup from central Thailand

Gaeng liang is an old Thai vegetable soup made without coconut milk and known for its peppery taste.

A paste of shallots, white pepper and shrimp paste seasons the seasonal vegetables and prawns.

Ingredients

  • Mixed vegetables (squash, corn, luffa)400 g
  • Prawns150 g
  • Shallots5
  • White pepper & shrimp pastesome of each
  • Thai basil1 bunch
  • Fish sauceto taste

Preparation

  1. Pound shallots, pepper and shrimp paste into a paste.

  2. Dissolve the paste in water and bring to a boil.

  3. Cook the firm vegetables first.

  4. Add prawns and soft vegetables.

  5. Finish with basil and fish sauce.
