Peppery vegetable soup from central Thailand
Gaeng liang is an old Thai vegetable soup made without coconut milk and known for its peppery taste.
A paste of shallots, white pepper and shrimp paste seasons the seasonal vegetables and prawns.

- Mixed vegetables (squash, corn, luffa)400 g
- Prawns150 g
- Shallots5
- White pepper & shrimp pastesome of each
- Thai basil1 bunch

Preparation
Pound shallots, pepper and shrimp paste into a paste.
Dissolve the paste in water and bring to a boil.
Cook the firm vegetables first.
Add prawns and soft vegetables.
Finish with basil and fish sauce.
