Thai jungle curry without coconut

Gaeng pa, the jungle curry, is a fiery central Thai curry made without coconut milk.

Rustic and wildly spiced, it holds plenty of vegetables, young peppercorns and krachai for an especially sharp heat.

Ingredients

  • Chicken400 g
  • Red curry paste3 tbsp
  • Young green peppercorns2 tbsp
  • Krachai (fingerroot)some
  • Mixed vegetables300 g
  • Fish sauce & kaffir lime leavessome of each

Preparation

  1. Fry the curry paste in a little oil.

  2. Add the chicken and brown.

  3. Top up with broth instead of coconut milk.

  4. Stir in vegetables, peppercorns and krachai.

  5. Season with fish sauce, serve spicy.
