Intense southern Thai fish curry

Gaeng tai pla is one of the spiciest curries of southern Thailand, built on fermented fish innards.

The deep, dark, salty-spicy curry is cooked with firm fish and robust vegetables like bamboo and eggplant.

Ingredients

  • Firm fish500 g
  • Tai pla (fermented fish paste)3 tbsp
  • Southern Thai curry paste3 tbsp
  • Bamboo shoots & eggplant300 g
  • Kaffir lime leaves5 pieces
  • Beans & pumpkinsome of each

Preparation

  1. Dissolve tai pla in water and strain.

  2. Boil the curry paste in this broth.

  3. Add the fish and cook.

  4. Add the vegetables and lime leaves.

  5. Reduce to a bold, savoury curry, serve with rice.
