Gai pad med mamuang is a Thai-Chinese wok dish of chicken with roasted cashew nuts.

A mild sauce of oyster sauce and dried chilies binds tender chicken, bell pepper and crunchy nuts.

  • Chicken300 g
  • Cashew nuts100 g
  • Dried chilies4 pieces
  • Oyster & soy sauce1 tbsp each
  • Bell pepper & onionsome of each
  • Spring onion2 stalks

Preparation

  1. Briefly toast the cashews and dried chilies.

  2. Fry the chicken in the hot wok.

  3. Add bell pepper and onion.

  4. Season with oyster and soy sauce.

  5. Fold in cashews and spring onion, serve.
