Gaji Namul

Steamed eggplant side dish

Gaji namul is a classic Korean banchan side of steamed eggplant.

The soft eggplant is torn into strips and dressed with soy sauce, sesame oil, garlic and sesame.

Ingredients

  • Eggplant2 pieces
  • Soy sauce1 tbsp
  • Sesame oil1 tbsp
  • Garlic1 clove
  • Spring onion & sesamesome of each
  • Gochugaru (optional)some

Preparation

  1. Quarter the eggplant lengthwise and steam soft.

  2. Let cool a little and tear into strips.

  3. Mix soy sauce, sesame oil and garlic.

  4. Gently toss the eggplant with the dressing.

  5. Serve scattered with spring onion and sesame.
