Crispy Korean potato pancakes
Gamja-jeon are Korean potato pancakes made from finely grated potato, especially loved in the mountainous Gangwon province.
The grated potato is fried together with its settled starch, making the pancakes crisp outside and tender within.

Ingredients
- Potatoes500 g
- Onion1/2 piece
- Salt1 pinch
- Oil for frying3 tbsp
- Soy sauce & vinegarsome of each
- Spring onion1 stalk

Preparation
Finely grate the potatoes and onion.
Drain the liquid, return the settled starch.
Salt the mixture and stir.
Fry flat in hot oil in portions.
Serve golden and crisp with a dipping sauce.
