Ganjang Gejang
Raw crab marinated in soy sauce
Ganjang gejang are raw crabs marinated in a seasoned soy sauce until the flesh is silky and deeply umami.
For their seductive taste they are fondly called a rice thief in Korea, because they make you eat so much rice.

Ingredients
- Fresh swimming crabs1 kg
- Soy sauce400 ml
- Garlic & gingersome of each
- Onion & apple1 each
- Chili & spring onionsome of each
- Sugar2 tbsp

Preparation
Boil the soy sauce with garlic, ginger, onion and apple.
Let the sauce cool and strain it.
Place the cleaned crabs in a container.
Pour over the sauce and marinate cold.
After a day, reboil the sauce, cool and pour over again.
