Ganjang Gejang

Raw crab marinated in soy sauce

Ganjang gejang are raw crabs marinated in a seasoned soy sauce until the flesh is silky and deeply umami.

For their seductive taste they are fondly called a rice thief in Korea, because they make you eat so much rice.

Ingredients

  • Fresh swimming crabs1 kg
  • Soy sauce400 ml
  • Garlic & gingersome of each
  • Onion & apple1 each
  • Chili & spring onionsome of each
  • Sugar2 tbsp

Preparation

  1. Boil the soy sauce with garlic, ginger, onion and apple.

  2. Let the sauce cool and strain it.

  3. Place the cleaned crabs in a container.

  4. Pour over the sauce and marinate cold.

  5. After a day, reboil the sauce, cool and pour over again.
