Gat Kimchi

Kimchi from spicy mustard leaf

Gat kimchi is a Korean kimchi specialty made from spicy mustard leaves, especially famous from the Yeosu region.

The leaves have a slightly peppery taste of their own and are fermented with robust fish sauce.

Ingredients

  • Mustard leaves (gat)500 g
  • Gochugaru (chili flakes)4 tbsp
  • Fish sauce3 tbsp
  • Garlic & gingersome of each
  • Spring onion3
  • Salt & sugarsome of each

Preparation

  1. Wash the mustard leaves and salt lightly.

  2. Stir a seasoning paste of gochugaru, fish sauce and garlic.

  3. Rub the leaves thoroughly with the paste.

  4. Layer with spring onions into a jar.

  5. Ferment for a few days.
