Squash in coconut milk with prawns

Ginataang kalabasa is a Filipino braise of squash and long beans in coconut milk.

Prawns and a touch of shrimp paste round off the sweet squash with savoury depth.

Ingredients

  • Squash600 g
  • Coconut milk400 ml
  • Prawns200 g
  • Long beans150 g
  • Shrimp paste (bagoong)1 tbsp
  • Garlic, onion & gingersome of each

Preparation

  1. Fry garlic, onion and ginger.

  2. Briefly fry the shrimp paste.

  3. Pour in coconut milk and add the squash.

  4. Simmer until the squash is soft.

  5. Add beans and prawns and finish cooking.
