Young jackfruit in coconut milk

Ginataang langka is a Filipino braise of unripe jackfruit in coconut milk.

With a little pork, shrimp paste and chili, the fibrous fruit turns savoury and creamy.

Ingredients

  • Young jackfruit (canned)500 g
  • Coconut milk400 ml
  • Pork belly150 g
  • Shrimp paste (bagoong)1 tbsp
  • Garlic, onion & gingersome of each
  • Chilito taste

Preparation

  1. Fry the pork belly with garlic and onion.

  2. Briefly fry the shrimp paste.

  3. Add jackfruit and coconut milk.

  4. Simmer until the jackfruit is soft.

  5. Season with chili and serve.
