Ginisang Monggo

Filipino mung bean stew

Ginisang monggo is a nourishing Filipino stew of softly cooked mung beans.

With a little pork, prawns and leafy greens, it is traditionally eaten on Fridays.

Ingredients

  • Mung beans250 g
  • Pork belly150 g
  • Prawns100 g
  • Leafy greens (spinach)1 bunch
  • Garlic, onion & tomatosome of each
  • Fish sauce1 tbsp

Preparation

  1. Cook the mung beans soft.

  2. Fry garlic, onion and tomato.

  3. Add the pork and prawns.

  4. Stir in the cooked beans and simmer.

  5. Add leafy greens and season with fish sauce.
