Pomelo salad with prawns
Goi buoi is a refreshing Vietnamese salad of juicy pomelo segments.
With prawns, herbs, roasted peanuts and a sweet and sour dressing, it makes a light delight.

- Prawns200 g
- Fish sauce & limesome of each
- Roasted peanuts3 tbsp
- Fresh herbs & shallotssome of each
- Sugar & chilisome of each

Preparation
Segment the pomelo and pull into pieces.
Cook the prawns and halve.
Stir a dressing of fish sauce, lime, sugar and chili.
Mix pomelo, prawns and herbs.
Sprinkle with roasted peanuts and shallots.
