Pomelo salad with prawns

Goi buoi is a refreshing Vietnamese salad of juicy pomelo segments.

With prawns, herbs, roasted peanuts and a sweet and sour dressing, it makes a light delight.

  • Pomelo1
  • Prawns200 g
  • Fish sauce & limesome of each
  • Roasted peanuts3 tbsp
  • Fresh herbs & shallotssome of each
  • Sugar & chilisome of each

Preparation

  1. Segment the pomelo and pull into pieces.

  2. Cook the prawns and halve.

  3. Stir a dressing of fish sauce, lime, sugar and chili.

  4. Mix pomelo, prawns and herbs.

  5. Sprinkle with roasted peanuts and shallots.
