Vietnamese green papaya salad

Gỏi đu đủ is a fresh Vietnamese salad of shredded green papaya in a sweet-sour fish sauce dressing.

Crunchy herbs, roasted peanuts and fried shallots give the light salad texture and depth.

Ingredients

  • Green papaya400 g
  • Fish sauce & limesome of each
  • Sugar & garlicsome of each
  • Vietnamese herbs1 handful
  • Roasted peanuts3 tbsp
  • Fried shallots & chilisome of each

Preparation

  1. Finely shred the green papaya and salt briefly.

  2. Mix fish sauce, lime, sugar and garlic into a dressing.

  3. Squeeze out the papaya and toss with the dressing.

  4. Fold in herbs and chili.

  5. Serve scattered with peanuts and fried shallots.
