Korean grilled beef intestines
Gopchang gui are grilled beef small intestines, a beloved specialty of Korean grill culture, often enjoyed with soju.
Carefully cleaned and seasoned, they are grilled crisp at the table and dipped in sesame oil with salt.

- Beef small intestine (gopchang)600 g
- Garlic & gingersome of each
- Spring onion2 stalks
- Sesame oil & saltsome of each
- Perilla leavesa few
- Gochujang dipas desired

Preparation
Clean the intestines thoroughly and pre-cook with garlic and ginger.
Grill crisp on the grill.
Grill the spring onion alongside.
Make a dip of sesame oil with salt.
Serve wrapped in perilla leaves.
