Korean grilled beef intestines

Gopchang gui are grilled beef small intestines, a beloved specialty of Korean grill culture, often enjoyed with soju.

Carefully cleaned and seasoned, they are grilled crisp at the table and dipped in sesame oil with salt.

  • Beef small intestine (gopchang)600 g
  • Garlic & gingersome of each
  • Spring onion2 stalks
  • Sesame oil & saltsome of each
  • Perilla leavesa few
  • Gochujang dipas desired

Preparation

  1. Clean the intestines thoroughly and pre-cook with garlic and ginger.

  2. Grill crisp on the grill.

  3. Grill the spring onion alongside.

  4. Make a dip of sesame oil with salt.

  5. Serve wrapped in perilla leaves.
