Gotu Kola Sambol

Sri Lankan pennywort coconut salad

Gotu kola sambol is a Sri Lankan salad of finely cut pennywort (gotu kola) and freshly grated coconut.

Lime, red onion and chili make the nutrient-rich salad fresh and zesty; it accompanies rice and curry.

Ingredients

  • Pennywort (gotu kola)150 g
  • Freshly grated coconut100 g
  • Red onion1 piece
  • Lime juice2 tbsp
  • Green chili1 piece
  • Salt & Maldive fishsome of each

Preparation

  1. Cut the pennywort very fine.

  2. Finely chop onion and chili.

  3. Combine with the grated coconut.

  4. Season with lime juice, salt and Maldive fish.

  5. Mix well and serve fresh.
