Okinawa stir-fry with bitter melon & tofu

Goya champuru is probably Okinawa's best-known dish - "champuru" means "mixed".

Bitter melon (goya), firm tofu, pork and egg are stir-fried together - a nourishing everyday dish of the long-lived island cuisine.

Ingredients

  • Bitter melon (goya)1 piece
  • Firm tofu200 g
  • Pork (in strips)150 g
  • Eggs2 pieces
  • Soy sauce1 tbsp
  • Bonito flakesfor sprinkling

Preparation

  1. Halve and seed the bitter melon, slice thin, salt briefly.

  2. Fry the crumbled tofu, remove.

  3. Fry pork and bitter melon.

  4. Return the tofu, stir in egg, season with soy sauce.

  5. Serve sprinkled with bonito flakes.
