Guilin rice noodles with braising sauce

Guilin mifen are round rice noodles from the city of Guilin in Guangxi, dressed with a dark, spiced braising sauce.

Classically topped with crispy pork, roasted peanuts and pickled sour vegetables, often dry rather than in soup.

  • Round rice noodles300 g
  • Pork200 g
  • Star anise & cinnamonsome of each
  • Dark soy sauce2 tbsp
  • Roasted peanuts3 tbsp
  • Sour vegetables & spring onionsome of each

Preparation

  1. Braise the pork with star anise and soy.

  2. Reduce the liquid into a dark braising sauce.

  3. Soak and cook the rice noodles.

  4. Toss the noodles with the braising sauce.

  5. Top with pork, peanuts and sour vegetables.
