Young jackfruit in coconut curry from Sumatra

Gulai nangka is an Indonesian curry of unripe jackfruit in a spiced coconut sauce.

The Padang cuisine of Sumatra shapes the dish with turmeric, galangal and chili.

Ingredients

  • Young jackfruit500 g
  • Coconut milk400 ml
  • Turmeric & galangalsome of each
  • Shallots, garlic & chilisome of each
  • Lemongrass & lime leavessome of each
  • Saltto taste

Preparation

  1. Grind the spices into a paste.

  2. Fry the paste with lemongrass.

  3. Add the jackfruit.

  4. Deglaze with coconut milk and simmer.

  5. Cook until the jackfruit is soft and the sauce thick.
