Gundruk

Nepali fermented leafy green soup

Gundruk is fermented and dried leafy greens, one of Nepal's national dishes and an important source of vitamins in winter.

The sour greens are cooked into a warming stew (gundruk-ko-jhol) with potatoes and spices.

Ingredients

  • Gundruk (fermented greens)60 g
  • Potatoes200 g
  • Tomato & onionsome of each
  • Turmeric & cuminsome of each
  • Garlic & gingersome of each
  • Chili & oilsome of each

Preparation

  1. Soak the gundruk and cut coarsely.

  2. Fry onion, garlic and spices in oil.

  3. Add tomato and potatoes.

  4. Add gundruk and water and simmer.

  5. Cook until the potatoes are soft, serve with rice.
