Crossing-the-bridge rice noodles from Yunnan

Crossing-the-bridge rice noodles are a Yunnan specialty; legend says a layer of hot oil kept warm the broth a woman carried daily across a bridge to her husband.

At the table, paper-thin meat, vegetables and rice noodles are added to the boiling-hot broth, where they cook in moments.

Ingredients

  • Rich chicken broth1 l
  • Rice noodles200 g
  • Chicken breast (thin)150 g
  • Egg2 pieces
  • Bok choy & spring onionsome of each
  • Ginger & saltsome of each

Preparation

  1. Simmer the chicken broth long until rich.

  2. Soak and cook the rice noodles separately.

  3. Slice the meat and vegetables paper-thin.

  4. Pour very hot broth into a deep bowl.

  5. Stir in meat, egg, vegetables and noodles, let stand, serve.
