Gyukatsu

Breaded beef cutlet

Gyukatsu is the beef version of Japanese katsu: a breaded beef steak fried only briefly so it stays pink inside.

Often finished at the table on a hot stone, it is cut into thin slices and served with salt, wasabi or tonkatsu sauce.

Ingredients

  • Beef steak (thick)300 g
  • Panko100 g
  • Flour & eggsome of each
  • Wasabi & saltsome of each
  • Tonkatsu sauceto serve
  • Oil for fryingplenty

Preparation

  1. Salt the steak, coat in flour, egg and panko.

  2. Fry briefly in hot oil, keep pink inside.

  3. Let rest briefly.

  4. Cut into thin slices.

  5. Serve with salt, wasabi and tonkatsu sauce.
