Grilled beef tongue from Sendai

Gyutan - thinly sliced, grilled beef tongue - is the culinary specialty of the city of Sendai, born in the post-war years.

The tongue is sliced, seasoned and grilled over charcoal until crisp outside and tender within - served with barley rice and oxtail soup.

Ingredients

  • Beef tongue (sliced)400 g
  • Salt1 tsp
  • Black peppersome
  • Sake1 tbsp
  • Spring onion1 stalk
  • Lemonto serve

Preparation

  1. Lightly score the tongue slices.

  2. Season with salt, pepper and sake, rest briefly.

  3. Heat grill or pan very hot.

  4. Grill the slices briefly on both sides over high heat.

  5. Serve with spring onion and lemon.
