Beef seared outside, raw inside

Gyutataki is a Japanese dish of beef seared only on the outside and left raw within.

Sliced thinly, it is served with ponzu, spring onion and grated ginger.

  • Beef fillet or roast beef400 g
  • Ponzu sauce4 tbsp
  • Spring onion2
  • Ginger1 piece
  • Garlic2 cloves
  • Oil & saltsome of each

Preparation

  1. Salt the beef and sear hard all over.

  2. Shock immediately in ice water.

  3. Pat dry and slice thinly.

  4. Top with spring onion and ginger.

  5. Serve drizzled with ponzu.
