Gujarati savoury lentil-rice cake

Handvo is a savoury, lightly fermented cake from Gujarat, made from rice, mixed lentils and grated vegetables.

A crisp sesame crust and a tempering of mustard seeds lend the baked cake aroma and bite.

  • Rice & mixed lentils300 g
  • Yoghurt100 g
  • Grated bottle gourd/carrot200 g
  • Mustard seeds & sesamesome of each
  • Ginger, chili & turmericsome of each
  • Oil & saltsome of each

Preparation

  1. Soak rice and lentils, grind coarse and ferment with yoghurt.

  2. Stir in grated vegetables and spices.

  3. Temper mustard seeds and sesame in oil.

  4. Pour the batter into a tin and drizzle with the tempering.

  5. Bake until the crust is crisp and golden.
