Egg-fried zucchini slices
Hobak jeon are Korean zucchini slices coated in flour and egg and pan-fried golden.

Preparation
Slice the zucchini and salt lightly.
Coat in flour.
Dip through beaten egg.
Pan-fry golden on both sides in oil.
Serve with a soy-vinegar dip.
