Egg-fried zucchini slices

Hobak jeon are Korean zucchini slices coated in flour and egg and pan-fried golden.

  • Zucchini2
  • Eggs2
  • Flour60 g
  • Saltsome
  • Oil2 tbsp
  • Soy sauce & vinegarfor dipping

Preparation

  1. Slice the zucchini and salt lightly.

  2. Coat in flour.

  3. Dip through beaten egg.

  4. Pan-fry golden on both sides in oil.

  5. Serve with a soy-vinegar dip.
