Hoy Tod
Crispy oyster pancake
Hoy tod is a crispy Thai pancake with oysters or mussels, popular at street stalls in Bangkok.
A batter of rice and tapioca flour is fried crisp with egg and served with bean sprouts and sriracha.

- Oysters or mussels250 g
- Rice & tapioca flour60 g each
- Egg2 pieces
- Bean sprouts150 g
- Spring onion & coriandersome of each
- Soy sauce & srirachasome of each

Preparation
Whisk rice and tapioca flour with water into a batter.
Pour the batter into the hot pan, add oysters.
Add egg over it and fry crisp.
Add bean sprouts and fry briefly.
Serve with coriander, spring onion and sriracha.
