Hupi Jianjiao
Tiger-skin peppers from the pan
Hupi jianjiao means tiger-skin peppers and describes green peppers that get a blistered skin from dry-frying.
Seasoned with garlic, vinegar and soy sauce, it is a simple, beloved home-style dish.

- Mild green peppers400 g
- Garlic4 cloves
- Soy sauce2 tbsp
- Black vinegar1 tbsp
- Sugar1 tsp
- Oil2 tbsp

Preparation
Dry-fry the peppers in the pan.
Press flat with the spatula.
Fry until the skin is blistered and browned.
Add garlic and fry briefly.
Deglaze with soy sauce, vinegar and sugar.
