Grilled squid from the festival stall

Ika yaki is grilled whole squid, a classic snack of Japanese summer festivals and markets.

Brushed with a glaze of soy sauce and mirin, it takes on a smoky-sweet aroma.

Ingredients

  • Whole squid2
  • Soy sauce3 tbsp
  • Mirin2 tbsp
  • Sugar1 tbsp
  • Ginger1 piece
  • Oilsome

Preparation

  1. Clean the squid and score lightly.

  2. Reduce a sauce of soy sauce, mirin and sugar.

  3. Cook the squid on the grill.

  4. Brush repeatedly with the glaze.

  5. Cut into rings and serve hot.
