Ikan Bakar

Grilled fish with sambal marinade

Ikan bakar, "grilled fish", is common across Indonesia and Malaysia and is coated with a spicy paste of chili, tamarind and kecap manis.

Grilled over charcoal, the fish gains smoky notes while the sweet-spicy marinade caramelises.

Ingredients

  • Whole fish (e.g. mackerel)600 g
  • Red chilies4 pieces
  • Tamarind paste1 tbsp
  • Sweet soy sauce (kecap manis)2 tbsp
  • Shallots & garlicsome of each
  • Lime & oilsome of each

Preparation

  1. Grind chilies, shallots and garlic into a paste.

  2. Mix the paste with tamarind and kecap manis.

  3. Score the fish and rub it with the paste.

  4. Cook over charcoal or in the grill.

  5. Baste repeatedly with marinade, serve with lime.
