Imagawayaki

Filled wheel-cake pastry

Imagawayaki is a round pastry baked in a mould, sold in Tokyo since the Edo period.

The golden pancake batter is classically filled with sweet red bean paste and eaten warm.

Ingredients

  • Wheat flour150 g
  • Egg1 piece
  • Milk200 ml
  • Sweet red bean paste200 g
  • Sugar & baking powdersome of each
  • Oil (for the mould)some

Preparation

  1. Whisk flour, egg, milk, sugar and baking powder.

  2. Heat the round moulds and grease them.

  3. Add batter, place bean paste on top.

  4. Cover with a little batter and join the two halves.

  5. Bake golden and serve warm.
