Filipino-style grilled pork belly

Inihaw na liempo is grilled pork belly, a staple of Filipino barbecue gatherings.

A marinade of soy sauce, calamansi, garlic and banana ketchup gives the meat its sweet, savoury sheen.

Ingredients

  • Pork belly slab800 g
  • Soy sauce4 tbsp
  • Calamansi or lemon3 tbsp
  • Banana ketchup3 tbsp
  • Garlic & peppersome of each
  • Brown sugar1 tbsp

Preparation

  1. Marinate the pork belly with all the ingredients.

  2. Let it rest for several hours.

  3. Grill slowly over medium coals.

  4. Brush repeatedly with the marinade.

  5. Slice and serve with a vinegar dip.
