Nyonya duck soup with salted vegetables

Itik tim is a Nyonya duck soup of Peranakan cuisine, in which duck is slowly simmered with pickled mustard greens.

Tamarind and salted greens give the rich broth a pleasant sour note that balances the duck fat.

Ingredients

  • Duck (in pieces)1 kg
  • Pickled mustard greens (kiam chai)300 g
  • Tamarind1 tbsp
  • Tomato & gingersome of each
  • Garlic & peppercornssome of each
  • Saltto taste

Preparation

  1. Blanch the duck and rinse.

  2. Start it in water with ginger, garlic and pepper.

  3. Add the salted greens and simmer long.

  4. Add tamarind and tomato.

  5. Simmer until the duck is tender and the broth rounded.
