Sweet-potato glass noodles – Korea's festive dish

Japchae was invented in the 17th century for a Korean king and was long regarded as festive fare. The translucent glass noodles (dangmyeon) of sweet-potato starch are pleasantly chewy and elastic.

Each ingredient is fried separately and combined at the end – so every vegetable keeps its colour and bite. Sesame oil and soy sauce give the characteristic sweet-savoury sheen.

Ingredients

  • Glass noodles (dangmyeon)200 g
  • Beef, sliced200 g
  • Spinach, carrot, mushrooms, onion1 handful each
  • Soy sauce3 tbsp
  • Sesame oil2 tbsp
  • Sugar & garlic1 tbsp each
  • Sesameto sprinkle

Preparation

  1. Cook the glass noodles per packet, rinse, mix with a little sesame oil and soy sauce.

  2. Marinate the beef with soy sauce, sugar and garlic and fry.

  3. Fry the vegetables separately, season lightly.

  4. Combine everything with the noodles, season with soy sauce and sesame oil.

  5. Sprinkle with sesame, serve warm or cold.
