Creamy Korean pine nut porridge

Jatjuk is a velvety Korean rice porridge of ground pine nuts and rice, regarded as a nourishing convalescent and festive dish.

The mild, nutty porridge was once served to the royal family and today is often given to those recovering and in the morning.

Ingredients

  • Pine nuts100 g
  • Soaked rice120 g
  • Water800 ml
  • Salt1 pinch
  • Honey (optional)some

Preparation

  1. Grind the pine nuts and rice finely, separately.

  2. Boil the rice paste with water and stir.

  3. Stir in the pine nut paste and simmer gently.

  4. Stir until the porridge is creamy and smooth.

  5. Season with salt, garnish with pine nuts.
