Jiachang Doufu
Home-style tofu from Sichuan
Jiachang doufu means home-style tofu and is one of China's most popular everyday dishes.
Golden pan-fried tofu is braised with doubanjiang, pork and vegetables in a savoury sauce.

Ingredients
- Firm tofu400 g
- Doubanjiang (bean paste)1 tbsp
- Pork150 g
- Pepper & spring onionsome of each
- Soy sauce & garlicsome of each
- Oil3 tbsp

Preparation
Cut tofu into triangles and pan-fry golden.
Stir-fry the pork in a wok.
Add doubanjiang and garlic.
Stir in tofu, pepper and a little water.
Braise briefly and serve with spring onion.
