Jiachang Doufu

Home-style tofu from Sichuan

Jiachang doufu means home-style tofu and is one of China's most popular everyday dishes.

Golden pan-fried tofu is braised with doubanjiang, pork and vegetables in a savoury sauce.

Ingredients

  • Firm tofu400 g
  • Doubanjiang (bean paste)1 tbsp
  • Pork150 g
  • Pepper & spring onionsome of each
  • Soy sauce & garlicsome of each
  • Oil3 tbsp

Preparation

  1. Cut tofu into triangles and pan-fry golden.

  2. Stir-fry the pork in a wok.

  3. Add doubanjiang and garlic.

  4. Stir in tofu, pepper and a little water.

  5. Braise briefly and serve with spring onion.
