Fried sesame balls with red bean

Jian dui are deep-fried glutinous rice balls coated in sesame, hollow inside or filled with sweet red bean paste.

They belong to classic dim sum and are especially eaten at Chinese New Year, symbolising luck and prosperity.

Ingredients

  • Glutinous rice flour200 g
  • Sugar60 g
  • Sweet red bean paste150 g
  • White sesame60 g
  • Warm water150 ml
  • Oil for fryingplenty

Preparation

  1. Knead rice flour with sugar and water into a dough.

  2. Portion the dough and fill with bean paste.

  3. Roll into balls and coat in sesame.

  4. Fry slowly golden over medium heat.

  5. Press gently so they puff, drain.
