Savoury Chinese breakfast crêpe

Jianbing is one of China's most popular street breakfasts: a thin grain-flour crêpe spread with egg straight on the hot griddle.

Filled with a crisp fried cracker (baocui), spring onions and savoury sauces, it is folded up and handed over piping hot.

Ingredients

  • Flour & mung bean flour150 g
  • Eggs2 pieces
  • Crisp fried cracker (baocui)2 pieces
  • Sweet bean sauce & chili oilsome of each
  • Spring onion & coriander1 bunch
  • Sesamesome

Preparation

  1. Whisk flour with water into a thin batter.

  2. Spread thinly on a hot griddle.

  3. Spread egg over it, scatter with sesame.

  4. Brush with sauces, add cracker and herbs.

  5. Fold up and serve hot.
